Hi, my honeys! Your girl has been following a low-carb, Ketogenic diet for the past couple months for health reasons, and I'm always looking for ways to feel like I'm cheating on my diet but actually not. I know myself and that I have no willpower whatsoever, so I need to find ways to feel like I'm eating something bad for me in order to stay on track. Yes, that's how I live my life, HAHA! One thing I didn't realize is that strawberries and berries in general are actually some of the more low-carb fruits. That's a good thing for me because I'm entirely obsessed with them.
I set out to make a strawberry jam-like sauce to go on all of my Keto treats like my low-carb cheesecake, low-carb donuts, sugar-free mousse and pudding, and Keto ice cream, too. It's basically the sauce I put on every dessert I make and also I'll just eat it by itself, too. It's that good! I don't know about you, but if it were me I would not have read this entire paragraph; I would have just scrolled down to the recipe, but if you're still here -- AWESOME -- and now I'll get to the recipe:
LOW - CARB STRAWBERRY SAUCE
Ingredients:
1 Frozen Bag of Halved Strawberries
Dash of Vanilla Extract
Instructions:
Place strawberries in sauce pan on medium heat covered until thawed.
Then add your Swerve and vanilla.
Stir and mash the strawberries a bit with your spoon.
Let simmer until juices in pan start to thicken.
Carefully add your strawberry mix to your Vitamix or blender, and blend.
Pour the sauce into a squeeze bottle for ease of use.
Immediately refrigerate to thicken it, and allow a few hours for it to cool.
Put it on low carb donuts, low carb cheesecake, sugar-free mousse, keto ice cream...etc!
